Zusammenfassung
Verbreitung und Vorkommen des Glykogens machen es verständlich, daß die Kenntnisse über seine enzymatischen Umwandlungen vorwiegend an Präparaten tierischen Ursprungs und mit Tierenzymen gewonnen wurden. Es ist zur Zeit nicht sicher, in welchem Ausmaß diese Erfahrungen auch auf pflanzliche Bedingungen übertragen werden können. Da aber nahe Beziehungen zu vermuten sind, erhält eine Besprechung des Bekannten auch in diesem Handbuch ihren Sinn. Im folgenden werden daher Eigenschaften und Wirkungsweise „in vitro“ der Enzyme des Glykogenabbaues und -aufbaues beschrieben werden, unabhängig von ihrer Herkunft und den physiologischen Verhältnissen. Wegen der nahen Verwandtschaft von Glykogen mit Amylopektin sind hierbei Überschneidungen mit schon Gesagtem1 unvermeidlich; in diesen Fällen wird sich dieser Abschnitt auf kurze Hinweise beschränken. — Die Forschungen auf diesem Gebiet sind in vollem Fluß; es ist daher nicht erstaunlich, daß viele Ergebnisse noch unsicher oder unvollständig sind und der Bestätigung bedürfen. Das gilt insbesondere für Fragen der Identität und der enzymatischen Einheitlichkeit der Präparate.
