Vitamin E — Vitamin C Synergestic Effect Towards Peroxyl Radicals: Influence of Dehydro-Ascorbic Acid

  • Chapter
Free Radicals, Lipoproteins, and Membrane Lipids

Part of the book series: NATO ASI Series ((NSSA,volume 189))

Summary

The Vitamin E — Vitamin C synergestic effect towards peroxyl radicals has been characterized by Υ radiolysis in ethanolic medium. Vit E — Vit C aerated solutions have been irradiated in the presence or in the absence of dehydro-ascorbic acid for ratios (Vit E)/(Vit C) between 1 and 27. The experimental results point out that the regeneration of Vit E from its oxidised radical by Vitamin C (k = 6 x 105mol−1.dm3.s−1) may be in competition with its consumption through the reaction of dehydro-ascorbic acid with the tocopheroxyl radical (k = 2 x 107mol−1.dm3.s−1).
