Abstract
Selling tickets, taking payment for drinks, food or souvenirs, preparing and cooking food, stocking up with supplies, whether it be of cleaning materials, stationery or glassware, are just some of the activities in hotels, catering, tourism and leisure which involve working with numbers. Figures have to be added and subtracted, multiplied and divided. This may involve decimals or fractions. Some data is dealt with as an average, ratio or percentage. Written financial information needs to be interpreted and acted upon. Pictures, diagrams, graphs or even codes or symbols are used to present information. Sometimes estimates of distances, weights, quantities and so forth are made. On other occasions precise measurement is required.
