Introduction
In today’s Western world, when we can order food at our fingertips, choose from a wide variety of everything, and have fruits and vegetables in and out of season, it is disheartening to know that every night millions of people are going to bed hungry. It was estimated that there were 780 million undernourished people in 2014–2016 (FAO et al. 2015, p. 9). Certainly, this number has come down from over a billion in the early 1990s, but still there is a lot of work that needs to be done to make the world food secure.
While achieving food security for the 780 million undernourished people is a challenge in and of itself, the task is even more daunting if we consider making future generations food secure as well. World Economic Forum estimates that by 2050, a global population of 9.8 billion will demand 70% more food than is consumed today (WEF, n.d.).
