Definition

Food security is the ideal situation when all people have physical, social, and economic access to enough, safe, and nutritious food and have the capacity to meet their food needs and preferences aiming to promote a healthy life (FAO 1983). There are four main dimensions of the concept: (1) availability; that is, the physical existence and how food is supplied from production and/or cultivation to marketing; (2) access, the resources to obtain sufficient quality and quantity for a nutritious diet and still consider economic, cultural, and social aspects that may interfere with the purchase of goods; (3) consumption, which is reflected in health and nutrition conditions; and (4) stability, related to how food supply remains constant, including factors such as economic resources, income, and the food itself (FAO et al. 2019).
