Definition
Risk analysis consists of risk assessment, risk management and risk communication. Food safety risk assessment is a process of identifying food borne hazards, assessing risks, gauging severity and potential health effects. Through risk assessment the likelihood of an undesirable event occurring and the consequences of this event are estimated. The mathematical model for calculating the probability of an undesirable effect occurring and the magnitude of the impact of the hazard are calculated. Risk management is a process of regulating the risks to acceptable levels. Risks should be transparently communicated to the public and they should be educated on how to avoid food borne diseases.
