Abstract

The field of nutrition had its early heyday in the first half of the 20th century, only to be superseded by the rapidly growing fields of biochemistry, molecular biology, immunology, and genomics in the latter part of the century. At the present time, questions are once again being asked about nutrients, but this time they are being directed toward genomics, proteomics, cell signaling, developmental biology, cancer biology, tissue engineering, and much more. Like much of science, the questions relating nutrition to specific states of health and disease that have not yet been defined are the most intriguing. The aim of this chapter, therefore, is to guide the reader to areas of uncertainty and to leave the development of new approaches to defining the nutrition—disease relationship to the imagination and genius of the student, scientist, clinical practitioner, or entrepreneur.
