Illegal Additives Immunoassay in Food

Abstract

Recently, food industry still suffers from the use of dangerous illegal additives. In this chapter, we introduced the immunoassay for the four kinds of illegal additives, including illegal colors, malachite green, phthalates, and melamine. In detail, we expounded the hapten design strategy, ELISA, and strip method established for these illegal additives.
