Abstract

As a professional It has been interesting to follow the American food story over the last 50 years and I would guess that many people had the same experience I did. Now we as Americans have a greater appreciation of food and its sources as well as the wide ethnic diversity available in the supermarkets. But at the same time we do less cooking ourselves. It is as if what we know and love about food has been replaced by watching it on TV.
