Abstract

Lyons (1973) proposed that the primary event leading to chilling injury was a phase transition in membrane lipids. Genetic engineering showed that high-melting point phosphatidylglycerol (hmp-PG) is an important factor (Murata et al., 1992; Wolter et al., 1992), although other factors are also involved (Wu and Browse, 1995).
