Abstract

In 1993, maize (Zea mays L.) was produced on 127 million hectares with a worldwide production of about 500,000 metric tons, thus representing the third most important crop after wheat and rice (FAO, 1994). Maize is grown in a wide range of climates and represents a major crop both in industrialized and developing regions of the world. It serves as food for direct human consumption as well as for animal feed. Although rich in metabolizable energy, the nutritional value of maize is limited by inferior protein quality, i.e., a deficiency in lysine and tryptophan.
