Abstract

The genus Cichorium belongs to the Compositae family and covers 9 species (Hegi, 1929). C. endivia (endive) and C. intybus var. foliosum Hegi (chicory, radicchio, witlof and roodlof) are used as vegetable crops, whereas C. intybus cv. sativum DC is used for its roots; this species has potential as a new industrial crop because it synthesizes inulin, a fructosan, which may be suitable for many industrial purposes, e.g., the production of glucose and fructose (Frese et al., 1991; Delesalle and Dhellemmes, 1992). C. intybus is also of biochemical interest for its possible use as a medicinal plant (Krivenko et al., 1989; Kaur et al., 1989), and for use of the bitter sesquiterpene lactones (Van Beek et al., 1990).
