Antioxidant Activity of Some Natural Extracts in Corn Oil

Abstract

Antioxidant activity of seven plant extracts was evaluated using accelerated aging of refined, bleached and deodorized corn oil at 65 °C. Methanolic extracts of coffee beans, rice bran, guava leaf, roasted wheat germ, rosemary (Rosemarinus officinalis),Peppermint (Mentha piperita), common basil (Ocimum basilicum) were added at concentration of 0.15% (wt/wt). The thermoxidation process was followed by measurement of peroxide value (P. V), primary (conjugated diene hydroperoxides) and secondary (volatile hexanal, pentanal, ethylenic diketones) oxidation products, antioxidant activity index (AI) and free fatty acids (FFA).
