Abstract

The microsomal oleate desaturase (FAD2) catalyzes the desaturation of oleate to linoleate, which are the main fatty acids in storage triacylglycerols of oilseeds. The growth temperature modifies the relative contents of oleate and linoleate in the seed lipids, indicating a temperature regulation of the FAD2 activity.
