Abstract
It is often said that oil and water do not mix. What is meant of course is that they are not mutually soluble, or that they are immiscible liquids. They can in fact mix as droplets of the one, the dispersed phase, distributed throughout the other, the continuous phase. Thus we can have oil droplets in water, or water droplets in oil. The former is referred to as a dispersion of oil in water, while the latter is generally called a water-in-oil emulsion.
