Abstract
A common approach to the assessment of welfare is the evaluation of its opposite, i.e. stress (Fraser et al., 1975; Wood-Gush et al., 1975; Dantzer and Mormède, 1979; Syme and Syme, 1979). This is particularly the case when physiological criteria are taken into consideration, since there is no direct physiological evidence of welfare. In contrast, it has long been known that exposure to physical or psychological stressors elicits a wide range of physiological changes in the organism which can be more or less easily detected.
