Abstract
Vitamin C is the general designation which is applied to the levo-enolic form of 3-keto-l-glucofuranolactone (Figure 40). Vitamin C is water soluble to form a fairly strongly acid solution (pH 3 at 0.5%). In the presence of water, vitamin C is rapidly oxidized. At a second stage of the oxidation, an irreversible metabolite is formed.
