Antimutagenic and Antitumour Activities of Lactic Acid Bacteria

Abstract

Epidemiological studies suggest that around one-third of all human cancers are related to the diet (Doll and Peto, 1981). Many studies on the presence of natural mutagens, antimutagens and cancer-modulating compounds as inherent factors of our food have been published in the last decade (Ahmed, 1992; Norred and Voss, 1994). At one time it was the opinion in cancer research that there was no relationship between carcinogens and mutagens, but reports that 4-nitroquinoline-N-oxide (4NQO), a carcinogen, also had the property of inducing spontaneous mutation in bacteria, and that N-methyl-N’-nitro-nitrosoguanidine (MNNG), a known mutagen, also induced stomach cancer, led inexorably to the conclusion that there is a close relationship between the two, and today it is clear that 85% of carcinogens are mutagenic (Sugimura, 1982). This indicates that there may be a steady increase in substances combining mutagenicity and carcinogenicity in our surroundings.
