Lipoxygenases

Abstract

The capacity of soybean seed to catalyze the oxidation of lipids was recognized 65 years ago (Andre and Hou, 1932) and the activity named “lipid oxidase”. The activity has also been described as “lipoxidase” and “carotene oxidase” (Summer and Summer, 1940; Theorell et al., 1947), but the term lipoxygenase (E.C.I. 13.11.12; linoleate: oxygen oxidoreductase) is now generally accepted. Lipoxygenase (LOX) from soybean seeds was among the first enzymes to be crystallized (Theorell et al., 1947), yet a crystal structure for what is now known as isoform I of soybean LOX did not emerge until almost 50 years later (Boyington et al., 1993; Minor et al., 1993). Over that 50 year period the perception of LOX has changed from a biochemical oddity (originally thought to contain neither a metal co-factor nor a prosthetic group of any description) to a key component of plants’ responses to stresses, including pest and pathogen attack (Farmer and Ryan, 1992; Croft et al., 1993), nitrogen status (Grimes et al., 1993), wounding (Saravitz and Siedow, 1996) and possibly drought (Bell and Mullet, 1991).
