Abstract

In the recent years extensive studies have been made to obtain immobilized lipase enzyme for interesterification of fats. To realize this purpose, lipase enzyme has to be held on inorganic or organic carriers which should also be inert to organic solvents, more specifically, the use of immobilized lipase enzyme provides certain advantages which is difficult to obtain by other means.
