Abstract
Compounds with both acidic and alkaline properties, i.e. the ability to release or bind protons, are described as amphoteric electrolytes or ampholytes. In acidic solutions they form cations, in alkaline solutions anions and in the mid-pH range ‘zwitterions’, i.e. molecules with two ionic groups with equivalent charges. Molecules to which this principle is applied on the hydrophilic group and which, at the same time, contain a hydrophobic fatty chain are known as amphoteric surfactants.
