Enzymatic Reactions in Organic Media

Abstract

Following our first publication on enzymatic catalysis in anhydrous solvents (Zaks and Klibanov, 1984), I still remember how skeptical colleagues would approach me at scientific meetings and voice their doubts of this being a geneal phenomenon. This book provides a striking illustration of how far such research has progressed since that time. Numerous examples of enzymatic reactions in anhydrous or nearly anhydrous media are described in several chapters. In addition, novel enzyme properties in nonaqueous media compared to those in water, such as the ability to catalyze reactions virtually impossible in aqueous solution, enhanced stability, and altered selectivity, are convincingly documented. Furthermore, useful synthetic applications of nonaqueous biocatalysis are presented, including industrial applications and those moving toward that status.
