Abstract

Soft colloids, such as emulsion droplets, foam bubbles or vesicles, are stabilized by adsorbed layers of surfactants or/and polymers. The stability of the dispersions is largely determined by the dynamic behavior of the adsorbed layers and of the thin films formed between two approaching colloidal particles. Surface tension is not the main surface characteristic property there, and other properties such as surface elasticity and surface viscosity become extremely important. In this chapter, we first define all these surface properties, indicate how they can be determined and discuss how they influence the colloidal stability.
