Abstract
Several sources of variation of dressing percentage are analysed:
-
1)
when it is related to the full body weight, it depends on the gut content of the animals and therefore on type of the diet, food intake and length of starvation period before slaughter;
-
2)
in any case the dressing percentage increases with fatness. It is higher in bulls than in steers or heifers. It also varies with breed.
