Abstract

The fatty acid compositions of subcutaneous, intermuscular, intramuscular, perivisceral and perinephric lipid of 30 bovine and 30 buffalo male calves slaughtered 20 — 28 and 36 weeks are reported.

The 18 : 1 is the fatty acid which is present in a greater degree in both species. Unsaturated fatty acids increase with the age of the animals; 18 : 0 and 18 : 1 occur more in buffaloes rather than in calves. The difference in fatty acid compositions between species increases with the age in all the sites considered.
