Abstract

A change in consumption habits entails a change in the type of slaughterhouse waste. The more affluent the population, the less the demand for processable offal. The maximum economic profit can be obtained if the maximum amount of slaughterhouse by-products goes to human consumption. The function of the slaughterhouse is to seek further possibititles of providing edible by-products for human consumption. The types of slaughterhouse by-products will vary only very slightly.
