Abstract
Many epidemiological studies and animal experiments on the relationship between salt intake, on the one hand, and hypertension and stroke, on the other, have been documented in the past [1–4]. The death rate from stroke in Japan is high.’ For years, attention has been drawn to high salt intakes in the Tohoku region, where the prevalence of hypertension is high. There have been many epidemiological studies on the relationship between the excessive salt intake and hypertension, and also a number of studies on the dietary pattern that is responsible for such an excessive salt intake [2, 3].
