Abstract
The ability of the human gastrointestinal tract to digest protein was first demonstrated by Spallanzani in 1783. He showed that if he swallowed some meat enclosed in a muslin bag, and then withdrew the bag from his stomach sometime later, then the meat had ‘dissolved’. This was essentially the first demonstration of the action of the proteolytic enzyme pepsin.
