Abstract

The major primary source of dietary amino acids for non-ruminant animals is the protein present in the harvested grain of crop plants. Of this about half is composed of a fraction termed storage proteins. The major sources of seed protein are shown in Table 1. From this it is obvious that the chief contribution is made by the cereal crops with legumes the second most important source - other crops make a relatively small contribution. This article will deal only with the cereal and legume storage proteins and within this group concentrate on those areas where most is known about the biochemical nature of the proteins and their deposition.
