Abstract
The consumer’s demand for leaner and tenderer meat, accompanied by a growing specialisation of animal production has increased interest in double muscled cattle for beef production. Thus, many studies have been made to describe the effect of the double muscled trait on slaughter traits, reproductive performance and breeding qualities in cattle. We shall give an overall survey of performance differences between double muscled and normal cattle of well differentiated, extreme, types.
The double muscled character leads to a modification of the growth curve in cattle, i.e, a higher birth weight and lower adult weight. This phenomenon is perhaps due to their poorer adaptation ability and to an interaction between their higher growth potential and all similar factors controlling the expression of this potential. Muscular hypertrophy leads to a large increase in the slaughter value because of a higher carcase yield, a larger proportion of muscles relative to bone and fat and a greater muscular compactness. These modifications affect the various regions of the body in different ways, depending on degree of muscular hypertrophy and skeleton reduction. The meat quality is also changed.
The problem of reproductive difficulties in double muscled cattle has been known for a long time. The double muscled trait produces an imbalance between the weight and morphology of the foetus and the dam at birth leading to a large increase in calving difficulties. Sexual behaviour, specially in young animals, is affected in double muscled cattle. The fertility of double muscled males is generally acceptable, whereas that of double muscled females is definitely lower than that of normal females. This subfertility is most likely due to the muscular development. The viability of double muscled calves is also lower than that of the normal ones. Furthermore, the milk production of double muscled cows is reduced.
The expression of these effects of the double muscled trait largely depends on the abilities of the breed in which the character occurs as well as on the type of management system. The advantages and disadvantages of double muscled animals in the various production systems determine the breeders’ choice. Moreover, in addition to the impact of double muscled animals on beef production, muscular hypertrophy my represent an interesting tool for analysis of the biological relationships between slaughter traits and breeding qualities in cattle.

La demande des consommateurs pour une viande plus maigre et plus tendre, accompagnée d’une spécialisation croissante des productions animales, ont renforcé l’intérêt des bovins culards en tant qu’animaux de boucherie. Ainsi de nombreuses études se sont attachées à décrire l’incidence du caractère culard sur les aptitudes bouchères des bovins puis sur leurs performances de reproduction ou plus généralement sur leurs qualités d’élevage. Nous présentons globalement ces différences de performances zootechniques entre bovins culards et normaux de types extrêmes bien différenciés.
Le caractère culard entraîne une modification de la courbe de croissance pondérale des bovins: poids à la naissance plus élevé et poids adulte plus faible. Ce phénomène résulte peut-être de leur moindre faculté d’adaptation et d’une interaction entre leur supériorité de potentiel de croissance et léensemble des facteurs contrôlant l’expression de ce potentiel. L’hypertrophie musculaire entraîne une importante plus value de valeur bouchère dûe à un rendement à l’abattage plus élevé, à une plus importante proportion de muscle par rapport à l’os et au gras et à une plus grande compacité des muscles de la carcasse. Ces modifications affectent différemment les différentes régions corporelles, selon des gradients d’hypertrophic musculaire et de réduction squelettique. Les qualités de viande sont également modifiées.
Les difficultés de reproduction des bovins culards sont signalées depuis longtemps. Le caractère culard engendre un déséquilibre pondéral et morphologique foeto-maternel lors de la mise bas qui se traduit par un accroissement important des difficultés de vêlage. Le comportement sexuel, surtout dans le jeune âges est relativement affecté chez les bovins culards.
Si la fertilité des mâles culards reste généralement acceptable, celle des femelles culardes est nettement inférieure à celles des femelles normales. Cette subfertilité est certainement une conséquence du développement musculaire. La viabilité des veaux culards est également inférieure chez les veaux culards. Enfin, la production laitière des vaches culardes est aussi réduite.
L’expression de ces incidences du caractère culard depend largement des aptitudes de la race où apparaît le caractère et des conditions d’exploitation de ces bovins. C’est la considération de ces avantages et inconvénients dans les divers systèmes de production qui régissent les orientations des éleveurs face au caractère culard. En outre, en plus de l’impact des animaux culards sur la production de viande, l’hypertrophie musculaire pourrait repres’nter un modèle d’étude intéressant pour analyser les relations bioloques entre les aptitudes bouchères et les qualités d’elevage chez les bovins.
