Abstract

The hind quarters from 129 carcases of 10 breeds, none of them showing muscular hypertrophy, sensu stricto, were dissected. The variation in morphology, tissue composition and shape of seven preselected muscles suggested that normal and double muscled cattle have a similar genetic determination for those characters that determine a good conformation, although in normal animals those characters appear in a lesser degree and are related to the degree of conformation.

The importance of carcase conformation as an economic character is supported. This is based on the relationship between tissue composition and conformation that has been shown for those types of beef carcases.

Résumé

Les quartiers arrières de 129 carcasses de 10 races, parmi lesquelles aucune ne montrait d’hypertrophie musculaire au vrai sens du terme, ont été disséqués. Les variations dans la morphologie, la composition tissulaire, ainsi que dans la forme de 7 muscles choisis, suggèrent que les bovins normaux et culards ont un déterminisme génétique pour ces caractères identiques à celui des bovins bien conformés, bien que chez les bovins normaux ces caractères apparaissent à un moindre degré et soient liés à l’expression de la conformation.

L’importance de la conformation de la carcasse en tant que critère économique est corroborée. En effet, pour ces types de carcasses de bovins, il existe une relation entre la composition tissulaire et la conformation.
