The Storage Proteins of Phaseolus vulgaris L., Vicia faba L. and Pisum sativum L.

Abstract

In recent years seed storage proteins have been the subject of extensive investigation due, firstly, to their economic importance as major protein sources for animals, and secondly, to their biochemical importance as model systems in the study of gene isolation, characterization and expression by molecular techniques. Seed storage proteins have evolved to provide a source of nutrition for germinating seeds and consequently make up a large percentage of the proteins in the mature seed. Such proteins are classified as storage proteins on the basis of several criteria, 1) they accumulate at a specific time in seed development, 2) they are relatively high in their nitrogen contents, and 3) they are sequestered in specialized inclusions (protein bodies) in cotyledon cells. Reviews dealing with the packaging of legume storage proteins into protein bodies have appeared elsewhere [8, 68, 77].
