Abstract
The paper briefly reviews main applications of ion exchange resins in food processing and the legislation in some EEC countries and in USA.
The most common exchangers and processes are mentioned.
National legislations concerning ion exchangers in food processing in Italy, France, Germany and USA are examined as well as exchanger grades and related application fields.
National authorizations requested and methods governing the use of exchangers are listed.
Main national laws and regulations are mentioned.
