Abstract

Green coffee contains a range of different carbohydrates, conventionally subdivisible into the groups of polysaccharides, and low molecular weight sugars which include tri-, di- and monosaccharides. These may be further divided into reducing and non-reducing sugars. There are, however, conflicting reports as to their detailed nature and amounts present, particularly for the polysaccharide fraction. Some carbohydrate-derived substances such as pectins are also present.
