Abstract

Chitin is a naturally abundant highly organized amino-sugar biopolymer. It is found in diverse taxonomic groups as a structural element largely for supportive purposes. Chitin is formed by certain diatom algae (Herth, 1979) and is prevalent in invertebrates, particularly in exoskeletons and peritrophic membranes of arthropods (Neville, 1975) and along with the deacetylated form, chitosan, in cell walls of most fungal species (Muzzarelli, 1977). Chitin is absent in vertebrates and plants where the analogous structural polymers are collagen and cellulose, respectively.
