  • Chapter
MILK the vital force

Abstract

Since 1973 selenium is generally accepted to be an essential tract element for man. The favourable influence of Se in the prevention of Keshan disease, its rule mucoviscidose and possibly other diseases, led to the recognition of the importance of the presence of this trace element in infant formulas. However not only the total amount of Se in the food is of interest, but also the bioavailability must be considered.
