Abstract
Grain prolamins play a decisive role in the aetiology of coeliac disease. What is the special make-up of these prolamins to interfere with the intestinal lining in people with a genetic constitution that makes them sensitive to these molecules? This question implies the facts that the intestine of a normal individual does not react to the same prolamins and that no other proteins cause a similar damage to the intestinal wall in gluten-sensitive and in non-sensitive people.
