Abstract

Two highly pyruvated xanthan samples supplied as fermentation broths have been investigated with regard to their conformational changes associated with the salinity driven order-disorder transition. Analysis and interpretation of the intrinsic viscosity, light scattering and optical activity data as a function of the treatment the samples underwent after the fermentation step show that xanthan can exist under a single or a double strand. This suggests that apparent discrepancies concerning the xanthan structure and solution properties may originate from differences in salinities and temperatures of the treatments that the samples underwent.
