Production of Gluconic and Galactonic Acids from Whey

Abstract

Whey was hydrolysed by Kluyveromyces bulgaricus cells immobilized in either alginate or chitosan beads. The hydrolysate was used to grow Gluconobacter oxydans. The identification of the acids produced was carried out by Gas Capillary Chromatography. Glucose was oxidised to gluconic acid in less than 24 hours. Galactose was oxidised to galactonic acid at a lower rate.
