Abstract

Pulses is the collective name for crops which belong to the legume family. People throughout the ages have eaten pulses. The Bible relates the story about the sale of Esau’s birthright to Jacob for a bowl of lentil soup. In the old Chinese Empire (about 2000 BC) the soya plant was looked upon as one of the five holy grains. (The others were rice, wheat, barley and milllet.)
