Strategies for Producing Low Arsenic Rice

Arsenic & Rice

Abstract

This chapter will discuss possible strategies to minimize arsenic accumulation in rice. Where grain arsenic concentration is elevated due to ongoing contamination, the ideal scenario is to stop the contamination at the source. However, this may not be practical due to other considerations. For example, there may be no alternative to irrigation with As-containing groundwater during the dry season of Boro rice production in some regions of South Asia. Even when arsenic inputs can be stopped or minimized, the existing level of arsenic in the soil may continue to cause elevated transfer to the food chain. Also, natural geochemical weathering of parent material has given rise to elevated arsenic in grain in many rice growing regions. Therefore, practical methods are needed to deal with this problem.
