Abstract
Eiwitten zijn een belangrijk onderdeel van alle cellen en weefsels in het lichaam, zoals spieren en organen, het zenuwstelsel, de botten en het bloed. Ze spelen verder een belangrijke rol bij tal van lichaamsfuncties, zoals in enzymen, hormonen en bij het transport van voedingsstoffen. Eiwitten kunnen ook gebruikt worden als energiebron (4 kcal/g). Eiwitten zijn opgebouwd uit aminozuren. Vooral in de groei wordt veel weefsel opgebouwd en zijn veel aminozuren uit eiwit in de voeding nodig. Een gebalanceerde voeding zou voor minimaal 10 en maximaal 25 procent van de energie van de totaal geconsumeerde dagvoeding uit eiwit moeten bestaan. In de Nederlandse situatie, met een in het algemeen ruime eiwitvoorziening, zijn geen eiwittekorten bekend.
De hoeveelheid eiwit in de voeding en/of de eiwitkwaliteit spelen voor zover bekend geen duidelijke rol bij het risico op chronische ziekten.Wel zijn er aanwijzingen voor een gunstig effect van een eiwitrijke voeding op de bloeddruk en op het verzadigingsgevoel.
Uitwisseling van dierlijk met plantaardig eiwit, zoals wel bepleit uit oogpunt van duurzaamheid, is zeer wel mogelijk mits voldoende gelet wordt op de eiwitkwaliteit en de juiste combinaties van plantaardige eiwitbronnen om een adequate voorziening met de essentiële aminozuren te waarborgen.
