Samenvatting

De meeste schimmels en gisten breken plantaardig materiaal af. Toch leven er ook schimmels bij de mens op de huid, ze gebruiken keratine als voedingsstof. Deze schimmels heten ‘dermatofyten’: in de huid groeiende planten. Gisten zijn bekend van het laten rijzen van brood en andere worden gebruikt bij de productie van bier. Maar ook daarvan zijn er soorten die op of in de mens groeien. De bekendste zijn Candida en Malassezia, die infecties van de huid en de slijmvliezen kunnen veroorzaken. Gisten die bij de mens voorkomen, gebruiken suiker of vet als voedingsbron.
