Samenvatting
Speeksel bevat verschillende eiwitten en peptiden met antimicrobiële eigenschappen. In kwantitatief opzicht de belangrijkste zijn:
Daarnaast bevat speeksel ook bacteriebindende eiwitten, onder andere immuunglobulinen, die hun kolonisatie in de mond remmen.

Lysozym: breekt mureïne in de celwand af en verstoort het membraan van grampositieve bacteriën. Hierdoor lyseert de bacterie en sterft af.

Lactoperoxidase (uit speekselklieren) en myeloperoxidase (uit leukocyten): katalyseren de vorming van de antimicrobiële verbinding OSCN− uit SCN− met behulp van waterstofperoxide. OSCN− inactiveert essentiële enzymen in de cel.

Lactoferrine: bindt ijzerionen die bacteriën nodig hebben voor groei. Bij proteolytische afbraak van van lactoferrine in de maag worden peptiden vrijgemaakt met bacteriedodende werking.

Chitinase: hydrolyseert bindingen in chitine, een onderdeel van de celwand van schimmels.

SLPI is een antibacterieel eiwit dat in lage concentraties in speeksel voorkomt.
