Zusammenfassung
Als erster beobachtete Kühnemann (17) außer kristallisiertem Zucker in ungekeimter Gerste eine in Wasser schwerer lösliche Substanz, die links drehte und deshalb „Sinistrin“ benannt wurde. Von ihr verschieden, beobachtete er eine zweite Substanz, die in Wasser leichter löslich war und aus dieser Lösung durch Alkohol ausgefällt werden konnte. Dextrine ließen sich aber weder in der ungekeimten noch in der gekeimten Gerste nachweisen.
