Lower-molecular Weight Carotenoid-carboxylic Acids: Bixin and Crocetin

Abstract

The carbon skeletons of these stereo chemically important pigments are identical with the middle section of the β-carotene molecule but the chromophore is terminated by conjugated carboxyl groups. Hence, it can be tentatively assumed that bixin, CH3OOC · C22H26 · COOH, and crocetin, HOOC · C18H22 · COOH, are products of the bio-oxidative cleavage of primarily formed C40-carotenoids.
