Abstract

Green coffee represents an important part of the international commodity market. Factors determining product characteristics, and consequently product prices, are: the country of origin, the processing method, crop. presence of defects, shape, grading, bean color and flavor, aroma and body that are very important for producing high quality espresso coffee.
