Zusammenfassung
Fettsäuren sind langkettige Kohlenwasserstoffverbindungen. Ist bei ihnen die maximale Zahl der Wasserstoffatome nicht vorhanden, spricht man von ungesättigten Fettsäuren. Fehlen z. B. der in Tier- oder Pflanzenfetten häufig vorkommenden und 18 Kohlenstoffatome enthaltenden Stearinsäure 2 Wasserstoffatome, dann liegt eine Doppelbindung vor und die resultierende Säure ist die Ölsäure. Die sich von ihr ableitenden Linolsäure (Omega-6) und Linolensäure (Omega-3) haben zwei bzw. drei Doppelbindungen. Die Omega-Bezeichnungen geben an, nach welchem C-Atom sich die erste Doppelbindung befindet.
