Proteine („Eiweiße“) sind Makromoleküle – große Moleküle – oder Polymere, die aus oft Tausenden von einzelnen Bausteinen, den Aminosäuren, bestehen. Kleinere Proteine heißen auch Peptide oder Polypeptide. Im Organismus haben Proteine zahlreiche Funktionen; tatsächlich sind es wohl die vielseitigsten Biomoleküle überhaupt:
