Zusammenfassung
Um die Funktionen unseres Organismus aufrechtzuerhalten, benötigen wir eine Vielzahl von Bestandteilen in der Nahrung. Energie wird mit den drei Hauptnährstoffen Kohlenhydrate, Fett und Eiweiß zugeführt. Wir benötigen zusätzlich Vitamine, Spurenelemente, Mineralstoffe (Salze oder Elektrolyte) und Wasser. Erst vor ca. 30 Jahren erkannte man, dass nicht nur Energie und die bis dahin bekannten essenziellen Nährstoffe in der Nahrung bedeutsam sind, sondern auch Ballaststoffe und Pflanzeninhaltsstoffe. Die ausreichende Zufuhr von Ballaststoffen wird heute als wesentlicher Bestandteil einer gesunden Ernährung angesehen. Die als sekundäre Pflanzenstoffe oder Phytochemicals bezeichneten Substanzen finden sich im Obst und Gemüse. Es sind Substanzen mit einer hohen biologischen Aktivität. Ihnen kommt eine Rolle bei der Vorbeugung von Erkrankungen zu. Allein aus der Gruppe der Karotinoide sind 500–600 verschiedene Substanzen bekannt. Die bekannteste Substanz ist das Beta-Carotin.
